Re: 7 month old gagging on solids.. HELP!!!
Dd did the same exact thing around that age (I think around 8 months) also -- she was doing well with solids for a week or two (meaning solids like puffs, smashed avocado, egg yolk ect...) and then started gagging all the time. My friend is a speech therapist and told me to just stop all solids for about a week and then slowly introduce solids again as if you never introduced them before. So start again with puffs broken into quarters, re-introduce avocado all smashed up ect....

Re: 7 month old gagging on solids.. HELP!!!
honestly I am not sure how being tongue tied affects feeding - you may want to contact the doctor about that and get more specifics.
If he is not showing any interest at all then I would wait a week and reintroduce. If he is still not interested again then wait a week and reintroduce. He will eventually be ready.
DD is a very very picky eater and I have to introduce foods multiple times before she will even look at it sometimes. I have learned not to push and let her lead the way - as long as they are growing and gaining weight (and trust me, DD gains about a 1/4 a pound a month) then they are thriving and doing well.
Try not to stress, I know easier said then done but I have been dealing with her feeding issues since day 1 ( she use to take 2 hours to finish a 6 ounce bottle ) and she is 20 months now and some days are just better than others.
