Vegatarians/Vegans come on in- Looking for dinner ideas
Hi everyone! DH and I decided we want to be more healthy at home and want to change the way we eat. I realized that our diet is very meat/dairy heavy and I am trying to reduce that. Does anyone have yummy suggestions that are (1) child friendly, (2) healthy, (3) delicious and (4) not too fatty (I'm on WW). We are kosher so shellfish is out for us.
Thank you!!!!!

We are kosher too. Are you opposed to fish? I have some great fish recipes....

DS loves humus and black bean soup (I will eat both, but DH does not touch beans unfortunately).
Other than that, not many ideas, though I need to look a bit too. DS just doesn't love meat, other than fish, and he can't stand eggs. I'd like something other than dairy to give him his protein.

I'm not a vegetarian but I don't eat much meat and try to cook as healthy as possible. I actually have a healthy recipes app on my phone and go to the vegetarian section a lot. This is the website: sparkrecipes.com
I've made a few things that were really delicious...
spinach & feta quiche zucchini quiche eggplant parm mac n cheese with veggies pasta primavera veggie lasagna
I still want to try the veggie chili, veggie meatloaf, potato soup & sweet potato black bean burritos!

Re: Vegatarians/Vegans come on in- Looking for dinner ideas
Hello! I've been vegetarian for 17 years (no meat/poultry/fish/shellfish and generally steer clear of eggs)
My best suggestion would be to pick up a copy of Vegetarian Times magazine. They always have a lot of great recipes with the nutritional info included and focus more on enhancing produce, whole grains and dairy, rather than using a lot of meat substitutes - though they do have things in there like mock chicken pot pie, as well.
The October issue also includes some cute recipes for a kid's Halloween party...they tend to highlight a few recipes in each issue that is family/kid-friendly.
Good luck!
