I finally made it!!
I love to cook but for some reason I've been worried about making a roasted chicken with stuffing. I know that sounds weird but my Mom does it so good I guess I didn't think I'd measure up.
Today I made an oven stuffer with my Mom's stuffing recipe, mashed potatoes & peas with onions (thanks to birdsye )
It was delicious, if I do say so myself. My DH said it smelled like Thanksgiving when he walked in.

I made a 6 1/2 pound perdue oven stuffer. It comes with the timer.
I used 4 potato hamburger rolls for the stuffing. I grated them on a cheese grater but you can just tear them apart too. To that I added 1/2 a large onion that I sauteed in 1/2 a stick of butter till soft. I also added one egg. Once that was all incorporated I stuffed it into the chicken. Make sure you take the giblets out first.
I coated the bird with olive oil, salt & pepper and placed it in a roasting pan with 1/2 cup of water. It took about 2 hours at 350. Just watch for the timer to pop.
