I'm so glad I tuned back into the weekly meal plan thread. I'm proud of myself this week b/c honestly for the last 3 months, I've been SLACKING BIG TIME due to morning sickness and I needed to snap back into it.
Anyway, I made these two recipes this week and they were delicious:
Veggie Lasagna (thanks for the lasagna tip ladies!)- for a family of 3, I have at least 2 more meals out of this!!!!

I did not do refried beans but brown rice on the bottom instead and I added jalapenos!
