I did trays - but nothing too heavy. We got a tray of chicken kabobs, beef kabobs, grilled balsamic chicken, tossed salads and pasta salads, things like that.

1st birthday party--food?
We did a pretty small party of about 25 so I was able to do the food myself. Just found things I could do in advance. We had pulled pork, sausage and peppers, balsamic marinated chicken, pasta salad, green salad, quinoa salad, and coleslaw.

If you're going with wedges, I would add potato salad bad pasta salad. You can prepare fried (or baked) chicken ahead of time and serve cold. Or even marinated filled chicken and grilled veggies like zucchini, onions, eggplant, etc... If you want hot dishes you can do pasta or lasagna. Sausage and peppers, chicken cutlets

We did two types of heroes, which came with potato salad and cole slaw. Then we (me, mom and sister) made string bean salad, pasta salad, and corn salad. We had chicken fingers and fries for the kids, which got eaten by many adults too!

I figured... bad pasta salad is more fun for a 1st bday party side.

Im loving the pulled pork dish! I always worried that the fat would solidify and get "icky" when reheated. how do you do this? Do you have a recipe?
