1 pot/pan meals
OK, looking for some great 1 pan dishes. Trying to make my life a little easier a few nights a week.
Anyone have any good recipes?

I LOVE this one and its really easy: Healthified Mexican Pasta Skillet
Also Stirfry is great- get the prepackaged veggies, precooked chicken or shrimp and cook in pan (I cook mine with Yoshida Sauce from BJs/Costcos)

I just made this last night and it was delish:
Lightened Up Paella:
1 tsp olive oil, extra-virgin 3 clove(s) garlic clove(s), minced (medium) 1 medium sweet red pepper(s), seeded and chopped 1 medium tomato(es), seeded and chopped 1/2 tsp saffron, threads, lightly crushed 1/4 tsp dried thyme 1 cup(s) reduced-sodium chicken broth 1/2 cup(s) frozen green peas 10 medium raw mussels, in shell, scrubbed and debearded 1/4 pound(s) shrimp, large, peeled and deveined 6 oz kielbasa, turkey, cut into 1/4-inch-thick slices 1 cup(s) instant long-grain white rice Instructions
Heat the oil in a paella pan or large nonstick skillet over medium-high heat. Add the kielbasa, onion, garlic, bell pepper, tomato, saffron, and thyme; cook, stirring occasionally, about 5 minutes until the vegetables begin to soften. Add the broth, rice, and peas; bring to a boil. Reduce the heat and simmer, covered, about 10 minutes.
Add the mussels and shrimp to the skillet and cover. Increase the heat to medium and cook until the mussels open, the shrimp are opaque in the center, and the rice is cooked, 8–10 minutes longer. Discard any mussels that do not open. Serve the paella at once. Yields about 2 cups per serving.

My kids love this and it is so easy!!!
Chicken and Broccoli with Orzo 1 pound chicken breast -- cut into bite-sized pieces 1 can fat free chicken broth 1 1/4 cups orzo pasta -- uncooked 1 large head broccoli, chopped 1/2 cup grated asiago cheese 1/4 teaspoon salt 1/4 teaspoon basil 1/8 teaspoon black pepper Heat broth in a large stock pot and bring to a boil. Add chicken, broccoli and pasta and bring to a boil again. Reduce heat Simmer 12 minutes, stirring occasionally. Remove from heat Toss with cheese, salt, herbs, and pepper. Top each serving with a sprinkle of cheese.

This looks good. Is the chicken cooked or uncooked?

This looks good. Is the chicken cooked or uncooked?
Uncooked. It cooks in the broth.

Chicken, peppers, onions & potatos
3-4 chicken cutlet, cubed 1 red pepper 1 red onion 4 potatoes cubed (partially cook in the microwave) 1 package of either Hidden Valley Ranch (powder) or 1 package Good Seasons Italian Salad dressing.
Throw everything in a bowl, drizzle with olive oil. Spray a baking dish with non-stick cooking spray
Cook at 350 until chicken is cooked all the way through
You can also do this with sausage -chunked - you don't need the olive oil and I wouldn't partially cook the potatos either, b/c the sausage takes a little longer to cook.

Skillet Lasagna
Prep 5 min Cook 30 min Stand 2 min 1/3 cup chopped onion 3 cloves of garlic mincied ½ pound ground round (can substitute with lighter meat) 2 tablespoons balsamic vinegar 2 teaspoons dried Italian seasoning, divided 1 cup part-skim ricotta cheese 4 uncooked lasagna noodles, broken into large pieces 1 (14.5-ounce) can Delmonte petite diced garlic and olive oil tomatoes undrained 1 cup bottled roasted red bell peppers chopped (drain juice then chop) ¼ cup water 5 teaspoons pesto ½ cup (2 ounces) mozzarella-parmesan cheese blend
Place a small amount of olive oil or cooking spray into large nonstick skillet over medium heat. Add onion and garlic and sauté for 2 minutes. Add beef to the pan, brown, stirring to crumble. Drain meat onion garlic mixture, return to pan and add vinegar and 1 teaspoon Italian seasoning. Stir meat to spread flavoring evenly. Dollop ricotta cheese, by rounded teaspoon, over meat. Top with broken noodles, making one flat layer (noodles will overlap a little) Pour tomatoes and peppers over noodles, making sure that noodles are completely covered. Add water and sprinkle with remaining 1 teaspoon Italian seasoning. Dollop pesto by half teaspoons over top. Bring texture to a boil. Cover, reduce heat, and simmer 30 minutes oruntil noodles are fully cooked. Uncover and sprinkle with cheese. Cover and let stand 2 minutes or until cheese melts. Cut into wedges. Remove from pan with slotted spatula.
Yield 4 servings (serving size: 1 wedge * ¼ of the pan)
Calories 407 Fat 14.9 (note the recipe does not call to drain the meat, so you save calories there, also if you use a lighter meat like ground sirloin or ground turkey you save additional calories)
