Crib Bedding...
This may be a dumb question.. but I hope someone can help me!
For newborns, how do make your crib and/or bassinet? What do you put on the mattress?
What do you put on the mattress when they start rolling around?

what do you mean? I put a sheet on the mattress and a waterproof cover underneath. And I use bumpers, you will hear mixed reviews on them.

I have bumpers, sheets with waterproof liner beneath. If there is one thing I could recommend to all mommies it's the zip top sheet = they are terrific. If you have to change sheets in the middle of the night, it doesn't require you removing all of the bedding. I registered for them at BBB but I know they have a site - Zip Sheets

I have 2 layers of waterproof padding and sheets, that way if he has an accident in the middle of the night I rip off the top layer and he's all set. I also use bumpers.
