meatless monday on another day
i'm in charge of Green Week at work.
one of the things i want to do is a meatless potluck.
of course, going with meatless monday would be super easy. the thing is that we have a few people who work T-S and aren't here on monday.
can you guys help me work a non-meat scenario alliteration for tuesday, wednesday, or thursday? please.
we don't do potlucks on fridays because no matter what we do, we all bring too much food lol
we do potlucks on tuesdays, wednesdays, or thursdays because we can have the leftover the following day 
thanks for any help

That's a great idea! First thoughts include pasta salad, eggplant parm or rollatini, vegetarian chili, lentil soup, veggie fried rice, quiche, curry.
I love making big salads with crispy chickpeas for protein and I usually do red onion, peppers, pepperoncini, kalamata olives, and feta.
Some kind of taco bar would be fun. You can have wraps, rice, quinoa as bases and toppings like roasted sweet potatoes, black beans, refried beans, corn, jalapenos, pickled red onions, guacamole, salsa, etc.

-We Don't Eat Meat Wednesday: WeD'EM Wednesday
-Thankless Thursday (less cause no meat)
-Trunkless Thursday (trunk meaning an animal body part)
-Truncate Meat Thurs/Tues. (TMT)

Is it all for food or are you concentrating on other stuff— you said Green Week? Here are a few ideas if it is the latter.
- Throw in a meatless dish Tuesday
- Wear no meat products (leather) Wednesday
- Think Green Thursday (people bring in their lunch in reusable containers, no paper towels, etc. You can bring this idea up ahead of time and get people to tell what they do for the environment.)
- Flashback Friday. Get people to make a vegan dessert. Then you can sit around and talk about how they felt about Green Week and how they improved at home and what they plan to change.
