places open on christmas eve
I know there's a ton of italian restaurants open, and we actually have a reservation in already because they book up months in advance... But what else is there to do on christmas eve? Is there anything really great to do for the holidays on that day?

I would find places/neighborhoods near you that have over the top dramatic lighting and go take a fun drive around with some hot chocolate.

Piggybacking off Otherme- Here is a site for Christmas Lights on LI. They check all the displays before they post it. It also has a calendar for other festivities. I plan to use it this Christmas season.
