how on earth do you people do it??!! bakers/cakes
picking a baker to make SO's birthday cake is stressing me out something fierce.
reviews for every single bakery is all over the place! how can you know which place is good?
what kind of reviews can you trust?

Yes. I don't really trust reviews online because there are some people who would complain in heaven.
Or maybe they have a personal beef with the owner, etc.

Exactly. I'd only focus on the reviews with text instead of just a star rating. Same as I do for anything I'm buying.
For instance, I have a FB page for my cake business. I have 5 stars ratings for all except 1. One person gave us 1 star. Why? Well because she wanted a german chocolate cake with a fondant design on top, which we advised against because german chocolate cake does not have smooth icing. She insisted, and we did our best. She gave the 1 star rating because the design didn't lay smooth. 
ETA: Also, go and try the cake. Some places do cake tastings others might have cupcakes to try. If you're worried about the design, look to see if they have a portfolio online.

I think you had a special design in mind? I would try to go by pictures then. Everyone has different tastes and orders different things, so you can't really trust reviews on taste.

I agree with getting samples. You really need to try for yourself bc everyone has different tastes.

i will be making sacrifices for the sake of science!!
so far... round one was a bust lol
the bakery has been featured on food network and a&e. their designs are quite beautiful and they have three locations in orange county.
sadly, the cakes taste like nothing but sugar. i have a sweet tooth the size of montana and this made me cringe. plus the customer service and attention was in the toilet. i was treated as though i was bothering her.
so, i'll be looking elsewhere.
i feel i did get lucky. two bakeries that make delicious cakes but don't do much for the decorating part, recommended the same third location. i called, their prices are a touch more expensive that the too sweet place, but if their flavors are anything like what i've been told, it'll be worth it
