Thinking maybe St. Lucia again, but we've been there. Wanted something new.

For our trip without the kids sometime at the beginning of next year we plan to do 3 or 4 nights in St. Martin and a day trip over to St. Barts

I would recommend Aruba. I can't think of a hotel with a private plunge pool, I think it ticks all of the other boxes

Look into Cocobay Resort in Antigua. There were no rooms available when DH and I went, but it looks amazing.

Also, Little Dix Bay (a Rosewood hotel) on Virgin Gorda has been closed undergoing a complete renovation. It is scheduled to re-open in December and I'm pretty sure it will be perfection! Here's an article that talks bout it (plus another resort in Antigua you might want to look into)

I know it's all inclusive.... but Sandals Antigua hits all your other boxes. We went on a baby moon and it was awesome.

Look up Banyan Tree Mayakoba in Playa Del Carmen. We went for our babymoon 4 years ago and it was amazing.
