Eggplant recipes that aren't Parm
Does anyone have any that aren't sauce and cheese based? I'm sick of oven baked eggplant with sauce and cheese

Eggplant curry
I love this recipe!
Also, slicing it into sticks and stir frying it with veggies is really good.

I cube it, season with salt, garlic and onion powder, toss with some olive oil and a splash of soy sauce, either roast it in the oven or saute in a non stick pan. I'll add other veggies if I have them - mushrooms, peppers, onions,

I cube it, roast it and toss it with pasta and sauce, top each serving with some ricotta.

Eggplant recipes that aren't Parm
I brown chopped meat, garlic and onions. When finished, add to a larger pot, throw in cubed pieces, a jar of sauce and whatever spices. Cook until the eggplant is soft. So good. Sometimes I serve over pasta or with some crusty bread. The pot will boil so make a lid is on
