Crockpot question
I put a beef brisket in the crock pot this morning at 7. I turned it to high so it would get hot, and went out to the bus stop with the intention of turning it to low when I got back. Needless to say, I left for work without ever turning it to low.
So it will be on high all day from 7 until 2:45 when someone gets home. Almost 8 hours on high. Will it burn? Will it be nasty? Should I run home mid day (a half hour each way) to turn it down?

It'll likely dry out, 8 hrs on high is a loooong time, hours longer than you would've needed on the high setting.
In the future, you don't need to do what you did. There is no reason to get it hot, by design a Crock Pot is meant to do its thing starting from the low setting. I would've turned it on low and let it be, putting it on the high setting first then lowering it really doesn't gain you anything.

High setting is for shorter intervals (2-4 hours).
I would definitely go home as soon as you can to lower it.

Thank you. I know I don't need to warm it up like that and I'm not sure why I do it. I like to know its hot before I leave for work. Stupid I know. I intended on setting it to low before I left. My bad.
I'm running home now to turn it down.

I agree with everything here. I would run home mid day and see if you can add just a little bit of water (I make my brisket with onion soup mix and water - not sure if you made a type of gravy for it to sit in) just to add a little more moisture.

Do yourself a favor, get rid of the crockpot and get an instant pot.
I make roasts in under an hour. I never have to worry about turning the pot high or low or return to the house with a rubbery piece of meat. I literally threw my crockpot out in the trash when I got my instant pot.
