Selling a car...Question
Has anyone ever sold a car "on the street" instead of trading it in? If so, what is the process in terms of paperwork? What do i have to provide and what if anything would you have the buyer sign? TIA

You need this form: https://dmv.ny.gov/forms/dtf802.pdf
Make sure you provide the title and lien release if applicable. Other then that theres no other paperwork that you need. The buyer would need this: https://dmv.ny.gov/forms/mv82.pdf
But they wont need that until they get to DMV. Good luck!

I've generally provided a bill of sale and signed the title
There is also an MV form that you are supposed to sign verifying sale price. I've done this once.
Also, I've always taken the registration off the windshield. Inspection I don't care about, but if they leave the registration on the windshield, the car can get tied to you if they get parking tickets and such without registrering.
Always went smooth on the transactions, but i haven't really ever dealt with anyone shady.
