Disney/Stroller
Going in July. DD1 is 5 and DD2 will almost be 2. 2 single strollers or 1 double?

We have always rented a double. I find it easier in that only one parent needs to push and the other is free to hand the kids snacks, purchase things etc.

A double. My DD was 6 and my DS was 1.5 when we went and the double stroller was a blessing!! We rented from Kingdom Strollers, they were awesome!

Double. This way one adult can help the kids on the buses while the other deals with the stroller. If you have two you each have to handle a stroller and a kid. If you drive you have to take two strollers and the kids on the tram.
Stroller parking can be crazy. You don't want to have to find two strollers every time you park. Also having one stroller gives a parent free hands if one wants to walk and the other ride. With two you each have to push one and maybe chase.

Two singles. We went in April, DD was 5.5 and DS was 2 (actually a week shy of 3). The 5.5 year old DEFINITELY still needed the stroller, no doubt about it.
There were many points in time where she wanted to do the bigger rides and DH would take her in her stroller and I'd walk around with the little guy and find something fun for him to do. If we had the double he'd have to drag her across the parks to catch a fast pass on many occasions and she isn't the fastest walker
Also, our double is so heavy, it was so much easier with two light strollers and also gave us more carry room in the baskets below.

I am hoping to go next summer. My girls will be similar ages. I plan on traveling with one light umbrella for dd2, and renting a double from one of the companies that deliver a double to your resort. This way, long days in the park I can have a seat for the 2 of them, but a quick night out (to Disney springs for example) where I know dd1 can walk, we can have the ease of just schlepping the one light umbrella on the buses. At least that's my plan as of now!
