Re: Healthy hidden veggie recipies
Pancakes- puréed fruits and veggies
Sauces of any kind- I fine dice everything so they don't know, for my oldest I used to blend it at the end so he couldn't see anything lol.
Meatballs- I've found if I put a tiny piece of mozz cheese in the center of the meatball, I can get away with spinach.
Quesadillas and omlets- they see it, but I guess the eggs and cheese make it all better, so they will eat onions and peppers, mushrooms etc
I'll come back if I remember others, I luckily haven't had to do this yet with my 3rd, and I can now force my older ones to eat better lol.. So there is a light at the end of the tunnel!

I have pureed, roasted butternut squash in the freezer leftover from when dd2 was new to solids. I add a cube or two to pancake batter, sauces, meatloaf, and mac and cheese. When I do meatloaf, I throw the veggies (peppers, onion, tomatoes) in my blender so dd doesn't notice them. I used to do a lot of smoothies with spinach. I keep a bag of baby spinach in the freezer and crumble some right into eggs or smoothies. Also, not the healthiest but I make fritters with different veggies sometimes and they go over alright.
