Need suggestions for simple dinner recipes
In need of simple dinner recipes for special needs young adults to make for families.
We recently made chicken taco soup. It worked well because it's basically a one pot meal.
Any good suggestions??

Baked ravioli. Just layer frozen ravioli, sauce, and cheese and then bake.
This baked pesto chicken is really easy, especially if you use chicken tenders rather than cutting your own. http://www.kalynskitchen.com/2010/09/easy-recipe-for-baked-pesto-chicken.html?m=1

Re: Need suggestions for simple dinner recipes
I have NO words for this dish. NONE.
I was watching The Chew on DVR weeks back and this came on, from Mario Batali, and it was so quick and simple that I made it the next night when my boyfriend came over for dinner. We both sat at the table, dug in, and after the first bite we just looked at each other like FOODGASM
I'm not a spaghetti girl so when I made it, I made it with rigatoni. I think just about ANY kind of pasta will do - so, whatever you like!
INGREDIENTS
1 pound spaghetti (or any type of pasta) 1/4 cup extra-virgin olive oil (plus more to serve/drizzle) 1 cloves garlic (sliced) 1 bunch fresh basil 1 pinch red pepper flakes 1 pint sweet cherry tomatoes (cut in half) 1 ball fresh mozzarella (cut or torn into bite-size pieces) 1/4 cup freshly grated Parmigiano-Reggiano (plus more to serve) kosher salt
DIRECTIONS
Bring a large pot of salted water to a boil. Drop the pasta and cook until al dente, according to package instructions. Meanwhile, preheat a large sauté pan over medium heat. Add 1/4 cup of extra-virgin olive oil to the pan along with the garlic, chopped basil stems and a pinch of chili flakes. Sauté for 2 minutes, until fragrant. Add the tomatoes to the pan and sauté for 3 minutes, season with salt and pepper. Add the pasta to the pan along with a few tablespoons of pasta water. Cook for an additional minute, tossing to coat the pasta. Remove from heat. Toss in the chopped basil leaves and add the mozzarella, and Parmigiano-Reggiano. Toss to combine and to slightly melt the cheeses with the heat of the pasta. Finish pasta with another drizzle of extra-virgin olive oil. Serve with more basil and freshly grated Parmigiano-Reggiano.
...TO DIE FOR I have made it like six times since. And what is awesome is this: you can add any meat to it and it comes out fantastic! I did sauteed shrimp, I did grilled chicken, you could even do steak bits! ANYTHING! It took all of ten minutes and it tasted like something you spent the whole day on or that you would get in a nice restaurant. You can also serve regular red sauce on the side to add to it. When that fresh mozzarella melts into the pasta and you get that little bit of heat from the red pepper flakes with the taste of the oil, garlic, and basil -- heaven on fuckkking earth!!!

Homemade pizza - use premade dough. Baked salmon is very easy. I do a few pats of butter, lemon slices, and seasoning sprinkled on top. Serve with roasted asparagus.

I love creating my own versions of pasta dishes like this. I don't even need recipes or instructions they are so simple and easy. However my issue is that they are all carbs and comfort food! Me and my kids have to have a good serving of veggies and protein! That's what I strive for but not easy when thinking quick.
