I use a backpack. Frees my arms and fits everything.

I was thinking that - and wondering if there are any good 'diaper bag backpacks' because I imagine they'd be compartmentalized better than a standard backpack.

I went to Walmart and bought a cheap diaper bag. I didn't mind if it got ruined. It worked great.
eta- I didn't want my good bag getting ruined or stolen.

Used my good travel backpack for Disney. It's Jansport. Lots of pockets and sections, which I like. Keep extra clothes and changing pad with diapers in one compartment and wipes, Lysol disinfectants wipes in another, tissues, chapstick, sunscreen and ponchos (you'll need them for Florida), etc in the others. I also brought a cooler bag for snacks and drinks that I put on the stroller hook.

OMG!
I looked back at the photos of our first trip to Disney.
DD was 1, DS was 2.
I ONLY took a purse. Had a changing pad & a few diapers. No stroller. It was NO issue & we had a great time. We only did a day there (we left after early dinner).
DH helped hold our 1 year old. She was walking by then.

I think a backpack is easiest b/c your DH can carry it too. - I find it makes life MUCH easier to separate things w/ large ziploc bags ......change of clothes, diapers/wipes, sunscreen, snacks - drinks I put in the cooler bag attached to the rental stroller. If you have the magic band it makes life SO easy b/c you don't have to carry cash or your room key - so really, it's just your phone/camera that you wouldn't want to leave in the stroller, everything else can stay.

I hate diaper bags. But I don't bring a ton of stuff. For diapers/wipes, I have a cute pouch that I repurposed and can just grab when I need to do a change. I put change of clothes in a ziplock. Then I carry a small cross body for myself.

How old is dc? Can you fit the necessities in a light cross body pocketbook? I love the lesportsac ones, you can fit tons in them and wear cross body.
