We've never traveled with a 2 year old, but this is what we've done on some past trips
Oahu - Waikiki Beach, Pearl Harbor, USS Missouri, hiked Diamond Head, snorkeling in Hanauma Bay, hiked Waimea Falls, shark cage dive, underwater scooters ("BOBS"), tour of Iolani Palace.
I don't know if they still do it, but the Disney resort used to have "day passes" that you could pay for allowing you to use the resort for a day without staying there. Like I said, I don't know if they still do it, or if it was just a promo when the first opened.
We've never done them but there is also the Honolulu zoo, an aquarium, the Dole Pineapple Plantation and the Polynesian Cultural Center.
Kauai: Hiked the Kalaulau trail, helicopter tour or Napali coast, boat ride along Napali coast, spending the day on Hanalei Beach, snorkeling, snuba, Waimea Canyon, Kauai coffee plantation, 4 wheeling, zipline
Big Island: Volcano National Park, Capt. Cook Monument, Mauna Kea, Waipo Valley
Maui: Haleakala for sunrise and sunset , Road to Hana, walking around Lahaina, day trip to Lanai for 4 wheeling and snorkeling, snorkeling at Molokini, the aquarium, horseback riding into Halekala Crater, drive along the "head" of Maui to blowhole, etc (very different from Road to Hana), Paia town, La Parouse Bay.
These are just some of the things. I'm sure there are many more family friendly activities (I'm assuming some of the snorkeling and hiking will be difficult with a 2 yo). There is so much to do. It's our 6th trip coming up and we still never run out of new adventures.
