We've rented a beach house in Niantic, CT the past two summers. It's a small beach town, lots of locals who live there full year round. Small town with a children's museum, awesome used book store, restaurants, ice cream shops. It's not very exciting, but it quaint and relaxing. The beach there is perfect for kids.

We used to go to Lake George every summer when I was a kid- swimming, paddle boats, fishing, mini golf, picnics- it was so much fun!

This would be my choice. Or camping.

Camping at Jellystone Quarryville! Sooo much fun for kids!! You can get a cabin with a bathroom, so not exactly roughing it, but still getting the camping experience.

We are going to Lancaster with 4 year old DS and thinking of not even doing DW or Hershey.
He is not a huge ride person and based on his interests would get enough out of the Strasburg RR sites, the Hands on House, Cherry Crest Farms, etc. along with pool/hotel amenities time.
But I love Lancaster. Plus it depends on the ages of your kids.
