In need of healthy breakfast ideas!
What are you ladies eating for breakfast? I feel like I eat crap because it's easy in the morning (I have a 4yo and 2yo that come with me to daycare at my job, so mornings can be a bit hectic!). I need to start eating healthy things that are easy and will fill me up. I'm a huge breakfast person- it's always my biggest meal of the day. Any suggestions? TIA!

Re: In need of healthy breakfast ideas!
i'm not a huge breakfast person (dinner gal here) but I opt for 2 hard boiled eggs, english muffin with peanut butter, Raisin Bran or I seem to really like Quaker's new single serve oatmeal medleys.
i did however try out a new recipe of baking an egg inside an avocado (425 degrees for 20 mins) and it was delish!

this is the recipe I followed but I used salt & pepper (onion or garlic powder sprinkled on would've been awesome too) and I also cracked the egg in a bowl first and spooned it in the avocado to make it easier
Egg Avocado recipe
i eat before i go to work but am such a zombie in the morning so that's why such simplicity for me haha

My breakfast of choice as of late is Ezekiel Cinn Raisin french toast: 1 or 2 slices of Ezekiel cinn raisin bread 1 or 2 eggs cinnamon splash of vanilla splash of coconut milk coconut oil
Coat pan with coconut oil. Throw in bread to get a lil crisp on both sides. Mix eggs, cinnamon, vanilla, coconut milk. Pour mixture into pan over bread so that mixture coats both sides of bread. Cook thoroughly. I top with a little agave or sometimes peanut butter and have some fruit on the side.

Re: In need of healthy breakfast ideas!
I've been very particular about what I can have for breakfast, it's become the pickiest meal of the day for me for some reason but what I usually have is one of the following:
Whole wheat bagel thin w/ cream cheese or Gluten free cereal w/ whole milk
and then some kind of fruit usually a banana
Need to start doing hard boiled eggs too

Re: In need of healthy breakfast ideas!
I currently can't stomach anything besides carbs but previously loved eggs of any kind with veggies (especially egg casseroles!) and homemade smoothies. If you are on a fairly traditional diet, you can do greek yogurt with berries and honey, baked oatmeal or crockpot oatmeal is really good and I have some recipes I can share if you want. I also find that sometimes 2 breakfasts works best for me. Something quick to satiate the morning hunger and then another, bigger breakfast later on. I might just be a hungry pig though! LOL

I make these without the blueberries, and they are awesome.

Re: In need of healthy breakfast ideas!
How about a parfait? I've been putting yogurt into a tupperware and adding granola, strawberries and blueberries from the night before and just grab it and go to work. With an English muffin with peanut butter
I also make this the night before- peanut butter on bread, hard boiled egg, cheese, grapes and apple
I have a Tupperware bowl of basic 4 cereal at my desk
Now I'm hungry. Lol

I have no time in the morning for making breakfast and prefer to just have cereal. I recently started eating Special K PROTEIN and that is very filling and really keeps you satisfied longer because of all the protein! I was surprised that it actually tastes good too
