St. Lucia - must see
For those who have been: what do you consider a must see and what do you recommend we skip?
Also, any dining recommendations?
We are staying in Soufriere, thoughts on renting a car. Do we need one?

Where are you staying? There's the volcano tour, but it was just okay. You can do lunch or dinner at Ladera which has a great view of the pitons from their restaurant. There is also a fish fry in town I think on Fridays? You can ask your hotel.
We did an open jeep tour that ended with a catamaran cruise to Anse Cochon for snorkeling is nice with a stop at Marigot Bay, which is absolutely stunning!
We also did the rain forest/water fall tour. Beautiful native fauna. We enjoyed that very much. We stayed on the north side of the island close to Rodney Bay where there are lots of restaurants within walking distance. From what I remember the south side of the island is more remote so I can't help with other restaurants. Hopefully someone else will chime in.

We loved St Lucia!
We did 2 excursions while we were there - One was fishing (DH is a big fisher), but I wouldnt recommend this. However, it wasn't the best weather that day, but we didn't catch much of anyhting.
We also did an Open Air Jeep tour...This went to a few little towns, a Waterfall, Mud Springs, Saw the Pitons, and the volcano. I would recommend this!
We booked them when we arrived at our resort. Also, snorkeling (which was included at our resort) was so much fun.
we met a couple who rented a car, and they said they spent almost an entire day filling out police reports after they got in an accident....the roads are really curvy and I personally wouldnt want to drive on them. Another couple did hire a taxi to bring them into town, so they could walk around and shop. they seemed to enjoy this.

We did something called the 'Soufriere Experience' , which was a trip to Diamond Falls and Botanical Gardens, Sulphur Springs/volcano and the mineral baths. We really enjoyed it. The fish fry is supposed to be awesome, but I think it's only on Fridays and didn't work for us timing wise. We did zip lining, if you're into that sort of thing. We stayed at Ladera and their restaurant, Dasheene, is awesome- great food and beautiful views. I definitely would not want to drive there! We made friends with our cab driver on the way to the resort and he drove us anywhere we needed to go while we were there. He was happy to make the fare, and it was totally negotiable.

Ohh soufriere is beautiful. You will love it. Definitely do the attractions near there - the volcano, the falls, etc.
My actual favorite tour I've done on St. Lucia (and I have done a ton of them) was the Joe Knows tour. it usually leaves from Castries and includes Soufriere so it might now be the best for you, but it was just a great, lighthearted awesome way to see island highlights on a speedboat.
Most tours will be by sea and sea is much more interesting than land. You'll want to see marigot bay of course and the pitons. Our most exciting was diving at Superman's flight which is right at Petit piton.
The rainforest is fun and has a great gift shop but you won't see monkeys and big blue butterflies, just a lot of green. They have a gondola ride as well as zip lining.
Castries is pretty safe and there are some little craft markets to go shopping. There is a NASA exhibit there that is pretty cool if you are interested in science and ecology. DH and I enjoyed it. There's duty free shopping here. Castries is the cruise port so that's where all of the touristy stuff is.
I did not get to do a jump up.fish fry, but that's a great experience.
There's also Fort Rodney historic site and beach. I haven't made it there either in 2 full weeks in St. Lucia, but it's only about $5 to get in.
