This is almost exactly my family's stuffing recipe. Instead of fresh sage, we use ground; we use unsalted butter, and we omit the pepper.
If you stuff the bird, omit the chicken stock. If you make it in a casserole dish, the chicken stock is a must.
Most grocery stores have loaves of "Stuffing Bread" right now. It's a firmer white bread that is unsliced. It's the perfect bread for this recipe.
