Maybe you can meet somewhere in the middle? A baby extends a family. It's your baby... but it's their grandchild. It extends the WHOLE family.
At the end of the day -- who is paying? Try to be understand if she wants to celebrate your baby in a big way? Maybe she can agree to only invite a few friends?

I know you want things a certain way, but then you should pay for the party. The way I see it, your family probably just wants to do something nice for you. I'd be thankful that they are throwing you a shower and let them plan it. They should check with you on good dates, but other than that, you can give your suggestions, but if they are paying, then they will probably make the decisions.

It sounds like your MIL is excited and wants to do something nice for you and your DH. I would just be firm with her that you want a family only dinner party to celebrate your baby. As for the food selection is there any way to comprise and serve a couple of simple food items that will please those that may not like Greek food? The food could be from the same place-I am thinking some thing universal like a roasted chicken dish or something along those lines.
I just want to add that I think it is wonderful that your MIL is excited about her grandchild- My mil congratulated me then rushed off the phone because she wanted to get dinner started.

MIL is excited and wants to do something nice for you guys
it seems like you never went over details with her originally so maybe that is why she went ahead and talked about a brunch etc. since it is at the aunts house, my guess is the aunt is looking to see what days she is available to have people over and maybe thats why they didnt get back to you on the dates yet?
i would give them your guest list and tell them this is who you want invited - that is all, no one else!
i would also give them the dates that work for you
in terms of food and stuff, if they are paying, i would let them pick what to serve but give them a menu to the greek place you want. they should take your thoughts into consideration
