Peru in January/Feb?
Any recommendations on where to stay? Any inclusive resorts? Where to visit?

Re: Peru in January/Feb?
I don't have any resort recommendations. But I do want to caution you that this the rainy season there so if you are going to go to Cuzco and go to Macchu Picchu just be prepared that they may not let you up to the mountain since the roads get flooded pretty easily. I went one year in Feb and I was fine but had cousins who went the follow year at the same time and they could not get up to see Macchu Picchu.
Good luck, it is a beautiful country. Everyone is so nice.

Re: Peru in January/Feb?
We went a few years ago in May. Where in Peru are you going? We stayed 4 nights in the Sacred Valley (Tambo del Inka, HIGHLY recommend) , 2 nights at the base of Machu Picchu (Inkaterra Machu Picchu Pueblo Hotel), 3 nights in Cusco (Inkaterra La Casona), and 2 nights in Lima (Hotel Miraflores).
The trip was pretty incredible. We ended up hiring a great guide with a driver, so I'm happy to pass on his info if you are interested.
The one caution is to be careful about the altitude. I got altitude sickness in Cusco, and spent 36 hours laid up in bed. It was pretty awful. But, the rest of the trip was great.

I went in February of 2012. Even though it was considered rainy season, we had fabulous weather. We were on a small group tour.
