disney eating and stroller ?
Ok so how many character meals do you do? I feel like dd would want to see every character at every park haha
And do I bring my double stroller. I have the britax bready and it's big and in order to fold it I need to take the seats off. Is the feasible on the buses and monorail? Or my other option is 2 single strollers which can be a pain

I have never done the meals so I can't help there but for evey tram etc I got on we had to fold the stoller. It was a pain and I only had the City Mini which is super easy to do.

You don't have to fold the stroller on the monorail so the only issue would be busses or parking shuttles. I would go with whatever you feels is easiest. They also have many companies down there that rent BOB and City Mini doubles if you feel that's easier. We brought our City Mini double and it was great.
We were there a week. For character meals - we did 2 (but, I have boys so I didn't do any Princess dining). We did the Tusker House (Donald, Daisy, Mickey and Goofy) breakfast and the Hollywood and Vine breakfast (Jake, Oso, June from Little Einsteins and Handy Manny - although I heard they may be changing it up to add Doc and Sofia). He doesn't really know the princesses or the Winnie the Pooh characters so we skipped those. We saw the characters plenty in the parks as well.
We also did dinners at TRex and the Rainforest Cafe which DS loved.

We don't do a lot of character meals because they take a lot of time and are very expensive. You can see characters for free at all of the parks, many of them!

Re: disney eating and stroller ?
We did 3 character meals & the girls LOVED them. But we did at least 1, sometimes 2 sit down meals each day. It gave us a little relaxing time, a good meal to reenergize, no lines to wait on or tables to find, & we never needed to go back to the resort with tired kids.
And they still wanted to wait for other characters (fairies, Jake, Jesse, chip n Dale, fairy godmother, all princesses & princes, Merida, Donald, Minnie, Mickey....at multiple parks
