cheese question - which are the safest?
when ordering food from a restaurant, which cheeses are considered safe (as in, always pasteurized so don't even need to ask)?:
ricotta mozzarella swiss american cheddar pepper jack feta fontina gruyere

I would say all of them except ricotta, feta, and mozz. It would be very, very rare for the others to be unpasteurized, but I would ask about the gruyere, fontina or swiss, if and only if I was at a verrryyy authentic restaurant.

it's usually the soft cheeses that are more likely to be unpasteurized. Honestly, I have never been at a restaurant where it wasn't pasteurized - I think you would really have to go out of your way to find it!

the restaurant is *supposed* to have farm-fresh ingredients.....
OK, so chedder and american are pretty safe bets, then?

Most likely. If they are using artisinal cheeses, usually they will name the farm on the menu. Then just google it on your phone. That is what I would do.

As long as you are ordering it in the United States there's a pretty good likelihood it's pasturized!
