I stayed at the St Lucian by Rex Resort. They have an AI option. It's not the fanciest resort but the beach is BEAUTIFUL (reduit) and people that we met coming home at the airport that stayed at higher end resorts complained about their beach (can't remember which one). It's a 3 star resort on a 5 star beach!
There is another AI resort down the beach from the Rex but I can't remember the name of it.

The Windjammer Landing. Beautiful all villa resort. They have AI option as well. From what I remember they have 3 or 4 restaurants on property including an upscale restaurant. Lovely staff who go out of their way for you.
