so here's what I got in my house, help me cook it
I have to make a dinner tonight or tomorrow morning that will be good and easy for my FIL to reheat for himself and DS tomorrow night. I defrosted chicken cutlets, but since I've waited to this time of night, I just don't feel like breading and frying I have chicken breasts, cans of tomatoes, onions, green peppers, garlic, and other pantry staples in my house. Any ideas on something yummy and easy?

How about shredded bbq chicken over rice or on buns? Sounds like you also have the right ingredients for a chicken chili. Either can be made overnight in a crock pot.

I'd stew it all, dump it in a pot, let it go until the chicken shreds. Serve over egg noodles/pasta, maybe some cheese - DONE!

i would dump it in the crock pot for 3 hours high and serve it over rice or pasta.

Do you have any creamy Campbell's soups? You can bake the chicken in the soup and even put uncooked rice in the dish that will cook in the sauce!

I did somewhere between this and stewing it all up as someone suggested
I used the recipe for inspiration, but made some changes based on what was in my house. It came out really good. Better than that, DH loved it! And he is so super picky. I couldn't even consider anything with bbq sauce with him.
Next time I will try with a creamy soup though. That sounds yummy!
