i just started eating quinoa
last night it was quinoa with dh's red beans
the night before was quinoa with eggplant, tomatoes and feta.

What is everyone eating for dinner lately?
the other night we had center cut pork chops dipped in a mixture of egg whites, grated cheese, minced garlic, and parsely... breaded in whole wheat bread crumbs... drizzled with olive oil and baked in the oven... OMG delish!! string beans and salad on the side
the night before i made chicken meatballs in tomato sauce
last week i followed a mu shu pork recipe from cooking light magazine and used lettuce as a wrap... yumm

What is everyone eating for dinner lately?
Last night I made enchiladas (the ones you make with the kit- nothing fancy). Tonight I'm making chicken parm. I try to find quick and easy things to make since I don't get home until 6 and I'm so tired by then!

We have been BBQing all summer! We do the whole meal on there - cut up veggies and sweet potatoes in foil and cook a lean meat like chicken or pork. Sometimes we do a whole chicken on the grill...yum.
I am also a fan of quick/easy meals. We also do a lot:
-Rice w/chicken in an indian sauce like tikka masala (in a jar)
-Whole wheat pita pizzas
-Spinach salad w/purdue breaded chicken, tomatoes, cucumber, cranberries, walnuts, etc
-BJs frozen fish w/veggies

I try to avoid processed foods as much as possible. No frozen dinners, anything that comes in a box, deli meat ( although I will have it on occasion). Dinners are usually Beef, chicken, fish, salads, vegetable curries, beans/lentils.
