Marinating Chicken in Italian Dressing
Surprisingly, I've never done this. I've had a bottle of Italian dressing sitting in my pantry forever.
Can I marinate thin chicken cutlets in it overnight? I googled it, but I'm getting mixed answers. Some people say overnight is fine; others say no more than 2 hours.
The dressing has no citric, but it does have vinegar.

Yes, you can marinate overnight. I don't see why you wouldn't be able to.

I read the vinegar will have a pickling effect and break down the proteins of the meat.

That's strange.  I've had chicken marinated overnight in Italian dressing and it has always been delicious. Most butchers even sell chicken marinated overnight in Italian dressing.

Marinating it overnight makes it taste even better. Robusto Italian dressing is the best!

Sometimes I will use italian dressing as the "egg wash" for breaded chicken cutlets. They turn out so yummy!

The acid in the dressing does start to "cook" the chicken a little the way a seafood ceviche works. I usually marinate it for about 6-8 hours and you will see the chicken get white on the outside. It tastes delicious though!

I marinate in Good Seasons Italian dressing, it is really yummy!! I even put the marinade in a Food Save bag and seal and freeze it...instant meal!
