Recipe Review–Lemony Linguine with Turkey Sausage & Spinach
I needed something quick & easy last night for dinner & had some turkey sausage thawed. I came across this recipe...unfortunately I didn't have any fresh spinach nor shallots, but I worked with what I had & it worked out great.
Lemony Linguine with Turkey Sausage & Spinach
(adapted from Dinner with Friends, originally from Weight Watchers)
Ingredients:
1 box of Barilla Whole Grain Linguine 1/2 lb. of Turkey Sausage 10oz. Frozen Chopped Spinach 1/8th cup of Chopped Green Onions 1 – 2 Lemons Directions:
Boil water & cook pasta according to directions on the box. While pasta is cooking, remove turkey sausage from casing & brown in skillet, breaking up with spatula. Steam frozen spinach in microwave, drain & then add to sausage along with green onions. Continue to warm a couple of minutes. Drain pasta & add to sausage/spinach mixture. Squeeze one to two lemons according to taste. (I did closer to two!)
I also sprinkled a little bit of Pecorino Romano cheese when serving.
The results – delish! Nice & light with the lemony flavors for summer! We’ll definitely make again!

sounds superyummy and I bet you could switch up the veggies pretty easily!
