Re: California - Disneyland and Carlsbad
So I'm thinking mainly casual since you'll have the kids, but good food, & not a chain that you have in NY and could eat at any time back home...
I'm not super familiar with the Anaheim area, but for your time in Carlsbad, I'd recommend Islands (yummy gourmet burgers, very family-friendly). And I like Sammy's Woodfired Pizza too, they have a really good variety of food on the menu. BJ's is another good choice with an extensive menu. I've never had something bad to eat there. They do get crowded in the evenings though (moreso on weekends) because they show sports games on the TVs and the bar crowd comes out.
For breakfast, I've heard people rave about The Broken Yolk, but I've never made it there myself yet. If you like the 50's diner-type atmosphere, Ruby's Diner serves breakfast, lunch and dinner. There's one in Carlsbad at the outlet mall, and another one in Oceanside (town just to the north of Cbad) at the end of the pier on the beach.
Downtown Carlsbad also has some nice locally owned restaurants and a Coldstone Creamery!

At the Grand Californian, I recommend the Staryteller's Cafe breakfast - it is a character breakfast buffet. they have a quick service called whitewater Snacks that is good too.
In the park, I recommend Plaza inn - the fried chicken is so good (and the meal is hue so you can share easily) and the Cobb salad is great too. The bakery just reopened, and I has heard the sandwiches there are good. The bakery stuff is too! For sit downs, I love Cafe Orleans, but Blue Bayou is in the Pirates ride,, so it has great ambiance.
