Need cheese sauce help...quick
Making a cheese sauce and it has a "grainy" texture when I taste it. How can I fix it???
I did 8T butter and flour + a gallon of milk, and 5lbs of cheese.

Did you use Cheddar cheese? That is usually why cheese sauce gets grainy. Also cooking on high heat. Unfortunately I don't think there is a way to fix it when it gets grainy. I know velvetta always makes a smooth sauce. I personally like to make it with Cheddar and take my chances. I usually make a basic bechamel(sp) sauce and then turn off the heat and add shreaded Cheddar a little at a time until its all melted.

also "they" say you shouldn't use pre-shredded cheese because it is tossed with an anti clumping agent, which can lead to graininess... that could be it, too.

Yes, thats another reason for graininess..preshreaded cheese. I always shred mine fresh as well.

Yup, fresh grated is best!
