Real carbonara
Anyone know of any italian restaurants on LI (nassau or western suffolk) that have real carbonara? None made with cream. I am looking for the authentic italian carbonara done with eggs.

bumping because I really want to get this in the next few days. Anyone know of any italian restaurants?? I could make it at home, but I don't think DH would eat it and I am afraid I'll mess it up.

Try to make it - just make 2 extra servings of pasta. If you mess it up, you have a back-up or just go out for pizza!

I guess I can try. I will have to have a second sauce anyway because i don't think my husband will enjoy it. I found some recipes and It seems easy. I am just afraid I'll cook the egg too much or not enough.

Did you check out Giada De Laurentis (sp?) from the food network. I remember her making it once on her show. It made me want to try it although I've never actually gotten around to eating it. Maybe you can find the episode and watch how she did it.

I used Giada's recipe from her everyday italian cookbook, I really liked it, as did my parents.

I don't eat eggs, but I bet if you asked in a few places, they'd make it for you special.

I have been to places that "have carbonara" but it always comes out made with cream and not real. but maybe I could ask for no cream and they would do it... I dunno.
