Stainless or Nonstick Cookware?

I am in the market for new cookware but I can't decide which to purchase.

Which do you have? Which would you recommend?

I have stainless. My reasoning was that whenever I have purchased nonstick in the past, it eventually flakes and has to be tossed. I've also heard that the flakes can be toxic, not sure how true that is though.

I have a nonstick set -- it's Calphalon -- and it's held up well. I cook often and I've had it since 2005.

But I am careful to use silicone utensils with them so as not to scratch the nonstick surface.

I also own a stainless skillet, a cast iron skillet, and a couple of the Le Crueset dutch ovens so that I have other options when I need them. But I like having the nonstick for everyday use - I think it's more practical for healthy cooking and for easy cleanup.

it really depends on how much and what you cook....

stainless is much better at searing things...

nonstick is much easier to clean, less fat/butter/oil needed ... etc..

I have a mix of cookware :
WMF stainless (purchased in Germany) for cooking and oven.
Chantal enamel on steel for cooking and oven.
non-stick for eggs and omlettes.

I say both. They are good for different things. Nonstick is usually safe unless you are heating it past 600* or something like that. It's better to buy open stock instead of a pre-fab set, anyway, since otherwise in a set there might be things you don't need and things you do need that aren't there.

I'd say you definitely want at least a stainless skillet- it's better for browning and searing. You might want to consider an enameled cast iron dutch oven - you can use it for braising, and as a stock pot for soups or sauces.
