Need a good chicken parm recipe please!
We're having friends over and I'd like to serve chicken parm with pasta. Can someone give me a tasty and not difficult recipe please?

Re: Need a good chicken parm recipe please!
I make the Pioneer Woman Chicken Parm....and it is DELICIOUS!
It isn't too time consuming....but it is very, very good.

Re: Need a good chicken parm recipe please!
First put olive oil in your frying pan.
Add a few cloves of garlic and let the oil sit there for a good half hour.
I pound out my cutlets with a meat mallet to a little less then half an inch in thickness.
sprinkle a little salt, pepper and granulated garlic over them.
Dredge in flour.
Dip in 2 eggs (beaten and mixed with just a little water)
Coat with a mixture of Bread crumbs, a little grated cheese (Reggiano/Locatelli mix) and some Italian seasonings (dried basil, parsley and oregano)
Heat the oil until it's really hot. Remove garlic before they burn.
Add the chicken and fry on both sides until just golden brown and crispy. Don't worry if it's cooked through.. you are just looking for color and crispness at this point.
Put cutlets on plate with towels or brown bag to drain.
Line the bottom of a baking dish with a little of your tomato sauce. And then put the fried cutlets in.
Cover with some sauce and top with a mixture of Italian cheese - I use mostly mozzarella with a little provolone and a pinch of the Reggiano and Locatelli.
Bake off for about 12-15 minutes until cheese is melted and chicken is cooked through.

I ended up doing a simpler version of this and it was a hit! When I have more time I'll try the recipe as posted, thank you!!!

Re: Need a good chicken parm recipe please!
I know you already made it, but for the future this is an insanely EASY recipe - (aka no pan frying as I'm a hot mess doing it! ) http://www.lifamilies.com/chat/topic.aspx?&P=1&ID=679948&Highlight=baked#P7794462
