Menu thread for the week of New Years
Tonight- Apps/drinks/desserts at a friend's house ( I'm bringing a yummy cold,mexican bean salad, olive tapenade and garlic crostinis)
Sun.- Baked potato soup
Mon.- Caramelized onion and goat cheese tart with stuffed artichokes
Tues.- Beef brisket, pierogies and roasted asparagus
Wed.-Homemade chicken soup with tubettini and romano cheese
Thurs.- stuffed peppers for me & DS, cheeseburgers and sweet potato fries for DH
Fri.- take out

Happy New Year!
Sun: Roast beef, shrimp stuffed twice baked potatoes, asparagus.
Mon: Roast beef hash, salad, bread.
Tues: Out.
Weds: Crockpot salsa chicken, salad.
Thurs: Leftovers.
Fri: Pizza night!
Sat: Crockpot french onion pork chops, egg noodles, brussel sprouts.

Trying to get back on the menu planning track! I'm also hoping to start stocking the freezer before arrives.
Sat: Cheese fondue and assorted apps
Sun: Roasted Chicken with Balsamic Vinaigrette, steamed broccoli, rice pilaf
Mon: Lasagna, green salad, garlic bread
Tues: ST Greek turkey meatballs with tomato, cucumber, and feta on pita
Wed: ST Crockpot italian turkey meatballs over pasta, green salad
Thurs: leftovers
Friday: leftovers or pizza

Monday - BBQ chicken breasts, roasted haricot verts
Tuesday - spinach and mushroom baked ziti
Wednesday - BLTs with sliced avocado, chips
Thursday - leftovers
Friday - sushi
Saturday - not sure yet, maybe beef stew or chili

New Years Day: Roast Chicken, Rice, Gravy, Broccoli, Cauliflower and Carrots with Roasted Lemon, Sausage Stuffing
Monday: Pasta for the boys and Spaghetti Squash for me, Red sauce with sauteed zucchini, chicken sausage, Salad
Tuesday: Pork Tenderloin, Roasted Potatoes, Applesauce, Green Beans
Wednesday: Beef burgers for the boys, (Salmon Burger for me), French Fries, Carrot and Celery Sticks
Thursday: Veggie Egg Scramble, Toast, Bacon, Mango and Orange salad
Friday: Seared Cod with tomatoes, Quinoa Pilaf, Sauteed Spinach
Saturday: TBD

sat - wedding
sun - dinner at in-laws
monday - fajitas with all the fixings (no rice, we like them just as they are and its a lower carb night then!)
tuesday - pasta with clam sauce
wedneday - leftovers
thursday - sweet garlic soy glazed salmon, couscous and a veggie TBD
friday - probaby take out, its busy season, by friday i doubt I will feel like cooking anything.

Sunday-Ordered in pizza
Monday- Swordfish steaks with a side of green beans (I may bake them with some sour cream and bread crumbs...I need to see if I have those items in lol)
Tuesday-Meat pies with spicy Portuguese sauce over egg noodles
Wednesday-Brunch enchiladas
Thursday-Potato and cheese stuffed pierogies
Friday-not sure yet...if I'm cooking, I'm going to make crockpot chicken enchilada soup

Sat: NYE Beef Wellington with Mushroom Duxelles, Twice Bakes Goat Cheese And Cranberry Potatoes, Creamed Spinach. Brownie ala mode for dessert
Sun: Think superbowl party buffet: wings, dips, mac n cheese, shrimp, chicken eggrolls etc
Mon: leftover snacks from yesterday
Tues: leftovers from Sat (can't believe how filling that 1 piece of meat was, we only ate half and barely any potato)
Wed: Taco night with all the fixins
Thurs: out with the girls (i think). If not, Chicken Fried Brown Rice
Fri: Pizza for the boys, salad for me

Do you have a recipe you could share for the meat pies with spicy Portuguese sauce over egg noodles?
Sure! It's the first time I'm trying it; it'll be a bit of a mix between my own recipe and a recipe from Emeril's cookbook. I'm not going to make as much, and I may leave out a couple of things because DH doesn't like them.
Here's Emeril's recipe: *Makes about 36 appetizer pies Ingredients for pies:
1 1/2 lbs. veal 3/4 cup fine dried bread crumbs 2 tablespoons chopped fresh cilantro 2 tablespoons buttermilk 2 large eggs 2 teaspoons minced garlic 2 teaspoons salt 1/2 teaspoon crushed red pepper flames 1 tablespoon Creole seasoning 1/2 cup flour vegetable oil
Ingredients for sauce: 2 tablespoons olive oil 3/4 cup finely chopped yellow onions 1 tablespoon minced garlic 2 anchovy fillets, minced 1/2 cup chopped lack olives 3/4 teaspoon crushed red pepper flakes 16 ounces crushed tomatoes 1 tablespoon tomato paste 2 tablespoons tomato paste 2 tablespoons chopped fresh parsley 2 tablespoons chopped fresh cilantro salt freshly ground black pepper
Meat pies: 1. Place the veal, 1/4 cup of bread crumbs, the cilantro, parsley, buttermilk, 1 egg, the garlic, salt, and crushed red pepper flakes in a large bowl and mix quickly but thoroughly. Form the mixture into meatballs the size of a large walnut, about 2 tablespoons each.
2. Beat the remaining egg with 2 tablespoons water and 1 teaspoon of the Creole seasoning in a shallow bowl. Combine and the flour and 1 teaspoon of the Creole in a shallow bowl. Combine the remaining bread crumbs with the remaining 1 teaspoon Creole in another shallow bowl.
3. Dip each meat pie first into the seasoned flour, then into the egg wash, letting the excess drip off, and finally into the bread crumbs, coating evenly. Flatten each ball slightly to form a patty and place on a baking sheet lined with waxed paper. Cover tightly with plastic wrap and refrigerate until ready to cook. The balls may be made ahead of time and kept in the refrigerator for up to 5 hours.
4. Add enough oil to come 1/2 inch up the sides of a large heavy skillet and heat over high heat until very hot. In batches, fry the meat patties in the oil until deep golden brown, 3 to 4 minutes on each side. Using a slotted spatula, transfer to paper towels to drain. Serve hot with the sauce.
Sauce:
1. Heat the olive oil in a saucepan over medium high heat. Add the onions and garlic and cook, stirring, until soft, about 4 minutes. Add the anchovy fillets, olives, and crushed red pepper flakes and cook, stirring often, until the anchovies dissolve, about 2 minutes.
2. Add the tomatoes, tomato paste, and 1/4 cup water. Stir well. Summer, uncovered, until the sauce has thickened, about 20 minutes.
3. Add the parsley and cilantro, and season with salt and pepper. Serve hot.
I'm just going to serve this over the egg noodles-that's my own addition.

Tues: meat lasagna, salad
Wed: stir fried salmon and bok choy over rice
