thoughts - is this safe to eat - eggplant parm?
background: made/assembled eggplant parm (so the eggplant is cooked and the parm is assembled), but it has not yet been baked. this was then frozen.
it was then thawed in refridge for 2 days, decided we werent having it any time soon, and popped it back in the freezer.
i want it for dinner...
is it safe to eat? or is it bad since its been "refrozen"?
i mean, its just eggplant, not meat
but what do you think...safe or not?

I think it is safe to eat, I just don't think it will taste great. In my experience, the eggplant parm has to be fully baked and then frozen, otherwise it doesn't really taste that great.

I don't think there is anything wrong with refreezing non meat items - the only thing that suffers is texture/flavor. I don't think it would be harmful unless it wasn't defrosted properly (i.e. I wouldn't refreeze something that was left out on a counter all day).
