Breakfast Casserole
Anyone have a good recipe? I was looking for something for New Years Day Brunch. I'm going to make a couple of quiches and overnight french toast so I was looking for something a little different to do with eggs- maybe with hash browns??

Ham and Tater Tot Breakfast
INGREDIENTS: 1 pound frozen tater tots 1/2 pound diced ham 1/2 cup chopped onion 1/2 cup green pepper diced 3/4 cup shredded cheddar 6 eggs 1/2 cup milk
PREPARATION: In crockpot, layer ingredients in order: tater tots, ham, onions, green pepper and cheese. Repeat two more times, ending with a layer of cheese. In a bowl, beat eggs and milk. Salt and pepper to taste. Pour mixture over layers in crockpot. Cover and cook on LOW for 6-8 hours.

You can do a breakfast bake.....
I usually prepare mine the night before I cook it.
Ingredients: 1 Sausage Log (use 2 of the Zesty Bob Evans) You can also use other types of meat (i.e. bacon, ham) 8 Eggs 12 Slices of bread ripped up (stale is best) 4 Cups shredded cheese (I used cheddar) 4 Cups of milk 1 Tablespoon of powdered mustard 2 Tablespoons of Worcestershire Sauce Salt and Pepper (Few shakes of each)
The night before: 1. Cook the meat. 2. Mix in a large bowl the 8 eggs, 4 cups of mile, tablespoon of powdered mustard, 2 tablespoons of worcestershire sauce and the salt and pepper. 3. In a 9 x 13 pan layer the following: 6 ripped up slices of bread, 2 cups of cheese, 1/2 cup of meat. Repeat again, 6 ripped up slices of bread, 2 cups of cheese and the rest of the meet. 4. Pour the egg mixture on top. Cover and store in fridge.
In the morning, preheat overn to 350 degrees. Cook the mixture for one hour.

my mom makes this every christmas!
5 Slices thickly-sliced white bread - crusts and all, buttered & cubed.
1 pound of mild sausage, cooked, crumbled and drained.
3 cups of grated extra-sharp Cheddar cheese
4 eggs
2 cups of milk
1 teaspoon dry mustard
1 teaspoon of salt
1 teaspoon of hot sauce.
1. Spray a 1 1/2 quart casserole dish with vegetable oil cooking spray. Place the bread cubes in the casserole. Evenly distribute the sausage over the bread cubes. Sprinkle evenly with cheese. Combine the eggs, milk, mustard, and hot sauce and mix well. Pour the egg mixture over the bread. Cover with plastic wrap and refrigerate overnight.
2. The next morning, remove the casserole from the fridge and allow it to sit on the counter for 15 minutes while you pre-heat the over to 350. Remove the plastic wrap, place the casserole in the over and bake for 1 hour.

I made one on Christmas in the corckpot - I was skeptical but it got rave reviews. You can tweak it too. This is how I made mine.
Store bought hash browns (the ones that are just shredded potatoes) 32 oz bag 12 eggs whisked with 1/2 tsp salt and 1/2 tsp pepper and 1c. whole milk 1 lb crisped and crumbled bacon 1 1/2 c. of shredded chees (I used cheddar)
Spray the crockpot w/ nonstick spray then Layer the potatoes, bacon, cheese 1/3 at a time and then cover with the eggs. Cover crockpot and cook on low about 6 hours (I did 7 and the edges were dark but not burnt, they suggested 9 hours).
I like spicy so I would add hot sauce next time or use pepper jack cheese instead. The orginal recips calls for ham, green peppers, onions, hash brows and cheese but you can really make it anyway you want
