Post Holiday menus
Tonight- Chipotle take out
Tues.- Meatloaf with mashed potatoes and corn for DH, greek meatballs with lemon sauce for me
Wed.- Grilled sausage, caramelized onion, rice and peas
Thurs.- Chicken pot pie or chicken and dumplings
Fri.- Take out

Monday: Leftover Fried Chicken and Leftover Mac & Cheese from Potluck on Saturday. Broccoli and Cauliflower with lemon and salt.
Tuesday: Leftover Penne alla vodka and leftover eggplant rollatini from Potluck. Salad and Garlic bread.
Wednesday: French Toast, Bacon, Orange and grapefruit wedges
Thursday: Steak, Baked Sweet potatoes, Sauteed spinach with garlic and oil.
Friday: Chicken and Dumplings, Salad.
Saturday: No Eye Dear.

I was thinking about trying the recipe in my new Slow Cooker Revolution book by America's Test Kitchen but this is the one I usually use with some slight modifications (it's Rachel Ray):
Ingredients 1 1/2 pounds chicken breast tenders (Sometimes I skip this step and just use cooked rotisserie chicken) 1 tablespoon olive oil, 1 turn of the pan 2 tablespoons butter 1 russet potato, peeled and diced 2 medium carrots, peeled and diced or thinly sliced 1 medium onion, chopped 1 rib celery, diced (I don't like cooked celery so sometimes I'll just add some celery seed) 1 bay leaf, fresh or dried Salt and freshly ground black pepper 1 teaspoon poultry seasoning, 1/3 palm full 2 tablespoons flour, a handful 1 quart chicken broth or stock 1 small box biscuit mix(preferred brand Jiffy Mix) 1/2 cup warm water Handful flat-leaf parsley, chopped 1 cup frozen green peas Directions Dice tenders into bite size pieces and set aside. Wash hands.
Place a large pot on stove over medium high heat. Add oil, butter, vegetables and bay leaf and cook 5 minutes, stirring frequently. Season mixture with salt, pepper and poultry seasoning. Add flour to the pan and cook 2 minutes. Stir broth or stock to the pot and bring to a boil. Add chicken to the broth and stir.
Place biscuit mix in a bowl. Combine with 1/2 cup warm water and parsley. Drop tablespoonfuls of prepared mix into the pot, spacing dumplings evenly. Cover pot tightly and reduce heat to medium low. Steam dumplings 8 to 10 minutes. Remove cover and stir chicken and dumplings to thicken sauce a bit. Stir peas into the pan, remove chicken and dumplings from heat and serve in shallow bowls.

monday - rigatoni with vodka sauce
tuesday - shrimp oreganata, leftover homemade creamed spinach and rice pilaf
wednesday - leftover vodka sauce with pasta
Thursday - chicken cutlets, mashed potato pancakes, leftover brussel sprouts with bacon,lemon and shallots
friday - take-out, pizza probabaly, lots to do that night!
saturday - NYE wedding

I'm always tweaking it.. but here's the current basics Put a whole chicken in a pot and then chicken stock to cover it and toss in a quartered onion (I remove the ends but leave the skin on because my family told me it deepens the color of the broth), some chopped carrots (maybe 2-3), a few broken stalks of celery with the leaves still on, a handful of whole peppercorns, a sprig of rosemary and some fresh thyme. Let that come to a boil and then reduce to a simmer for about an hour. Remove the chicken from the pot and let cool. Broth free of the veggies. Add about a cup of apple cider. While chicken is cooling add fresh chopped onion, 2 carrots sliced up, 2 salts of celery sliced and some diced potatoes (up to you how much). Throw in the pot and let it boil - then reduce to a simmer for about 30 minutes. Meanwhile - debone the chicken and toss that back in the pot. Correct the seasoning by adding kosher salt and fresh ground pepper. Now add about a half cup of cream and whisk it into the broth . Take 2 cans of CHEAP canned biscuits and cut the whole can into quarters. Throw the biscuit pieces into the pot and cover and let it cook for about 10 - 15 minutes on medium/low heat. When you remove the top the biscuits should have bloomed and should be covering the entire surface of the broth. They will be a little chewy in the middle but NOT doughy.
Cut into the biscuits and serve the soup topped with the dumplings.

Monday- manicotti and meatballs Tues- eggplant parm and left over manicotti left overs all gone. Wed-Take out Thurs-going to the tree so take out Fri-pizza

Sunday- Ben's Kosher Deli Monday- Take out Chinese food. Tuesday- Sausages and peppers on rolls w/ melted mozzarella cheese Wednesday- Going out to dinner w/ friends. Thursday- Turkey Thighs, stuffing, green veggie. Friday- I saw a recipe in a magazine I am going to try. Saturday- (NYE) Shrimp cocktail, Green salad w/ Ginger dressing, Rib steaks, baked potatoes, rice pilaf and for dessert molten chocolate cake w/ vanilla ice cream.
