I make this recipe every Christmas. DH loves them.
1 cup unsalted butter 1/2 cup sugar 2 egg yolks 1 tsp. vanilla extract 2 cups AP flour 1/2 tsp. salt 1/4 jelly
~ In large bowl at med. speed cream butter an sugar until light and fluffy ~ Beat in egg yolks and vanilla. ~ Gradually add flour and salt until well blended. ~ Refrigerate dough 1 hour. ~ Preheat oven 350 degrees. ~ Roll dough into 1 inch balls and place on ungreased cookie sheet 2 inches apart. ~ Using thumb or I use the end of a wooden spoon make depression in center of each. Bake for 10 minutes. Remove cookies and make depression again on each. Fill each with 1/4 tsp jelly (I just eyeball it) and bake 5 more minutes. Cool on wire rack.
Makes 4 dozen.

i do something similar, but also roll the ball of dough in chopped nuts brfore i use my thumb...

I made a batch & decided to do a second, and it's baking right now....
Thumbprint Cookies 2 sticks (1 cup) salted butter, softened 1/2 cup confectioners sugar 2 teaspoons vanilla extract 2 teaspoons almond extract 2 cups all-purpose flour 1/4 teaspoon salt
Topping: fruit preserves (i always use apricot and raspberry) chopped walnuts or almonds confectioners sugar for dusting
T of dough into small balls, about 1 inch in diameter (don't make them too big because they do spread! Make them so they seem too small to you!) Place dough balls on lightly greased cookie sheet (or use parchement paper) about one inch apart. Press down the center of each ball with a spoon, forming a depression. FIll each indentation with nuts or preserves.
Bake 15 to 20 minutes or until golden brown. Transfer cookies immediately to a cool, flat surface. When cookies are completely cool, dust them lightly with confectioners sugar.
Makes about 2 dozen cookies!
I used seedless blackberry jam! YUMMY!!!

In a large bowl, cream butter and sugar using an electric mixer. Add vanilla & almond, scraping down sides of bowl as needed. Blend in flour and salt, mixing until thouroughly combined.
Roll tablespoons of dough into small balls, about 1 inch in diameter (don't make them too big because they do spread! Make them so they seem too small to you!) Place dough balls on lightly greased cookie sheet (or use parchement paper) about one inch apart. Press down the center of each ball with a spoon, forming a depression. FIll each indentation with nuts or preserves.
