What would you make with these ingredients?
Basically we have a ton of veggies and not much else. I was going to make a stir fry with veggies, rice and tofu, but somehow we ended up having rice every day so far this week. And I want to use these veggies up before we go away this weekend! Oh, and DH isn't eating processes carbs, so pasta, pizza, etc. are off the table.
We have:
Shiitake mushrooms
Green peppers
Swiss chard
Carrots
Celery
Onion
Garlic
Tofu
Cilantro
And that's pretty much it, save condiments, spices and leftovers.
HELP!

Really good idea! He and DD had eggs the other night, I think, when I was out, but beggars can't be choosers, can they?

I'd also say something with eggs, like a quiche or scrambled eggs with veggies.
You can also do a veggie stir-fry but use noodles instead of rice.
Or what about stuffed peppers with the tofu and other vegetables inside of the peppers?

can you chop up the tofu and make like a chili? I don't eat tofu so not sure if that is even possible

How about a nice vegetable soup? Then you can freeze whatever is left over.

I would make soup, but won't be home early enough to let it simmer very long, so I'm afraid it wouldn't be very good.
