Do you think this would be ok?
I'm not much of a baker, I bake from the box. I have a mix for pumpkin cookies and I was thinking of making whoopie pies. Do you think it would be fine to use a mix for the cookies and make the filling myself? Or do you think I would need to make the cookie part from scratch for them to be moist enough/have the right consistency?

It should work but they may be crispier than traditional whoopie pies.
I would watch closely as you bake them to make sure you don't over cook them. You will want them to still be chewy.
Even if they are crispier, just tell everyone they are supposed to be that way - they sound yummy!

Not sure if this helps but i made the molasses cookies fromt he dry cookie mix this weekend and they are so soft and moist!

It is a dry cookie mix, so hopefully they will be moist. I found a maple cream cheese filling and I just hope they come out as delicious as they sound.
