I make these cookies every year and everyone raves about them!
2 sticks (1 cup) salted butter, softened 1/2 cup confectioners sugar 2 teaspoons vanilla extract 2 cups all-purpose flour 1/4 teaspoon salt Topping: fruit preserves (i always use apricot and raspberry) chopped walnuts or almonds confectioners sugar for dusting Preheat oven to 325. In a large bowl, cream butter and sugar using an electric mixer. Add vanilla, scraping down sides of bowl as needed. Blend in flour and salt, mixing until thouroughly combined. Roll tablespoons of dough into small balls, about 1 inch in diameter (don't make them too big because they do spread! Make them so they seem too small to you!) Place dough balls on lightly greased cookie sheet (or use parchement paper) about one inch apart. Press down the center of each ball with a spoon, forming a depression (I use my tupperware 1 teaspoon measuring spoon for this, and then fill it with the jam...it's the perfect indentation because it is nice and deep). FIll each indentation with nuts or preserves. Bake 15 to 20 minutes or until golden brown. Transfer cookies immediately to a cool, flat surface. When cookies are completely cool, dust them lightly with confectioners sugar. Makes about 2 dozen cookies!
