DH and I are starting to budget out our trip for next year. How much in total would you say you spent? Flights, hotel, eating, excursions...

You aren't providing enough information for people to help you.
Are you talking about London and Paris or the English Countryside?
How many days?
Are you taking round trip airfare or are you flying into one city and out of the other?
I would start with at least 1k per person for flights.
Hotels - depends on if you are going to these cities, but if you are, I would say at least 250-300 night.
Not sure what you mean by excursions. If you are going to the cities, it is primarily walking around, museums, monuments, etc.
Food - I would say at least 300 a day - thinking 100 for dinner 50 for lunch 50 for breakfast/snacks/etc. It could be less if you don't drink, more if you like fancy wines.
The exchange rate is what kills.
