does anyone have an easy/quick one??

Turkey drippings into a pan on the stove top. Add some Wondra and whisk to make a roux. Add Turkey stock - if you don't have turkey stock you can use chicken stock. Add chicken base (like a boullion paste) or salt and pepper to taste if needed. Add a drop of Gravy Master and whisk to the desired consistency. If it is too thin add some flour to a cup with a little stock and whisk to a thick paste and then add into the gravy slowly - a couple of teaspoons at a time - until you get it where you want it. If it is too thick - add straight up stock until it's thinned to the point you desire.
I always finish by whisking a small knob of butter into it.. gives a little more depth of flavor and a nice gloss.

I haven't made a turkey gravy, but I can share my chicken one.
I make a roux ahead of time- equal parts flour and butter. I do about an oz or two of each depending on how much I need. When the chicken comes out of the oven, I take it out of the pan and then pour off about half of the liquid. I think deglaze the hot pan with white wine, just enough to get everything stuck to the bottom off. I then add this to my roux and whisk in chicken stock (one to two cups, depends how much roux I made) and the rest of the pan drippings (depends on how much fat there is). Thin an thicken with more roux or stock.

Honestly I just use the turkey drippings, just strain it.
