I'm not a fan of stuffing personally, but my DH is and I made a pine nut stuffing and he said it was the best stuffing he ever had.....
I am trying to locate my exact recipe, but there are a few online as well...

I've never had it before but I bet a "waldorf" type stuffing with cranberrys and walnuts or pecans and apples would be OUT OF THIS WORLD!

MIL makes THIS RECIPE from the Barefoot Contessa. It's delicious.
My mother makes an italian stuffing with sausage and ricotta cheese that I absolutely LOVE.

i love mine with roasted chestnuts in it.
DH loves his with sausage.
maybe it can be a chestnut-sausage stuffing.

My grandmother makes one with mozzarella, proscuitto, eggs, italian bread and other cheese and it's just amazing
