I have never hosted a christmas brunch, but I have done a mothers day brunch and none-holiday brunches.
Quiches are always the most popular item it seems. I usually do a bacon and onion or a broccoli and bacon quiche but since it is christmas brunch, it would be great with ham. So I recommend some sort of quiche, like a ham and onion one.
french toast casserole is a popular dish on this forum.
to incorporate christmas red, i would do a cocktail with cranberry juice.
I would do muffins or a bread... like cranberry chocolate chip muffins or banana bread.

I'm doing this too this year on Christmas morning.
I'm not sure what I'm making but I think I might try the Skinny Taste recipe for Overnight Bananas Foster French Toast.

I host brunch on Christmas morning, but it ends up being more like breakfast! My menu is usually this:
French Toast Casserole Frittatas: roasted veggies; onion and bacon; etc. OR last year we did the Easter Breakfast casserole (cut up english muffins, eggs, sausage, cheese, peppers baked in the oven) Corn waffles Home fries Baked Ham Brown Sugar glazed bacon Fruit salad
I try to keep it simple and do a lot of each thing.

When I have brunch, it is usually more of lunch since my parents live a few hours away and it never starts before noon.
I have done: - quiche or fritatta (Love potato and chorizio from foodnetwork.com recipe) -Roasted asparagus or grilled zucchini - Assorted mini sandwhices - bacon wrapped asparagus or breadsticks -Pasta salad -Fruit Salad
