What are some side dishes you make? veggies, starch, etc
For some reason I can no longer think of side dishes. I find myself with the same boring sides all the time.
What are some side dishes you make? Veggie, starch, everything. And if you don't mind, a little detail about how you make them.
I need to desperately liven up our dinners!

I'm in a side-dish rut too! Do you ever look at the Weekly Menu threads? They are helpful!
This week (taken from my post on weekly menu thread):
Cheesy mashed potatoes Side salad Egg noodles Yellow rice Couscous, tomato, cucumber salad Corn Tater tots Citrus salad
I'm taking the rest of these from old weekly menus - some are from before Logan was eating, so don't assume that he eats all this stuff
White rice brown rice macaroni salad sliced cucumber baked potato with sour cream and chives cold orzo salad cispy baked potato wedges (aka french fries) homemade rice-a-roni couscous caesar salad roasted veggie orzo garlic bread parmesan baguette pico de gallo pinto beans saffron rice burnt broccoli 3-cheese orzo with spinach corn bread roasted zucchini with onion & thyme individual potato gratins

Rice - all kinds... yellow, wild, brown, etc...(I haven't been doing rice too much lately though as DS gets constipated easily)
Sweet Potato rounds. I just lightly coat with olive oil, sprinkle just a small amount of light brown sugar, or honey on top and roast in the oven until soft.
Butternut squash (same as above)
Spaghetti Squash with parmasean cheese and a little olive oil
Mashed Cauliflower w/garlic and shallots, or cheesey mashed cauliflower.
Edamame
Roasted Brussel Sprouts (yes, my kids LOVE them!)
Mashed Potatos
Any type of veggie really. My kids like veggies.

I actually just looked at these today and realized I could get ideas there. Duh! Thanks for all of the great suggestions
It gets hard sometimes bc although my DS is a great eater and willing to taste almost anything, some things he won't eat yet. And, he must be the only child who does not like pasta Kills me that he won't eat pasta. He did when he was younger (he just turned 2) but now he spits it out, something about the texture. He won't eat peas or corn either. Or cole slaw.
